SNOWBALL COOKIE


This Snowball Cookie Recipe (with pecans) is a perfect choice for the holiday cookie plate. With only six ingredients, this is a recipe you can pull together quickly. Then watch how they magically disappear in no time at all.



My mom has been making these cookies for as long as I can remember and it's always around the holidays. She could always tell when we would sneak one out of the jar because there would be traces of powdered sugar all over our faces.


My dad likes them so much, he always requests a double batch because they go that fast!


How to make Snowball Cookies


This Snowball Cookie recipe is so simple to make. Let’s take a quick look.


Combine butter, sugar, pecans, flour and vanilla extract in a large bowl and mix with your hand (or baking utensil of choice).





Using a tablespoon, scoop out a heaping spoonful of the crumbly dough and roll into a one-inch ball (approximately speaking).

Place on an ungreased cookie sheet and bake at 350F for about 20-25 minutes.


Roll each ball in powdered sugar. Let them cool, completely. And roll them in powdered sugar again. Store in an airtight container.




Easy peasy lemon squeezy, right? The most tedious part is rolling between 36 and 48 “snowballs.” If you have some helping hands around the house, be sure to recruit them. Make some special holiday memories in the kitchen together.


This Snowball Cookie Recipe is one that pairs perfectly with milk, so be sure to have some of that on hand too. And if you should decide to keep a plate of them on the counter, beware… they may disappear quickly (wink wink). Enjoy.

INGREDIENTS
  • 1 cup salted butter, softened

  • 1/4 cup sugar

  • 2 cups chopped pecans

  • 2 cups all-purpose flour

  • 2 teaspoons vanilla extract

  • powdered sugar


INSTRUCTIONS

  1. Combine butter, sugar, pecans, flour and vanilla extracts in a large bowl.

  2. Mix together with your hands or spoon/spatula.

  3. Roll into one-inch balls. Place on ungreased baking sheets.

  4. Bake at 350º for 20-25 minutes.

  5. Roll in powdered sugar while warm; let cool and roll again in powdered sugar.
