Slow Cooker Chicken Tortilla Soup

I love a soup where I can throw everything together at once, and there's so chopping or sautéing involved. This Chicken Tortilla Soup is exactly that!



BENEFITS OF A CROCK POT


My crock pot is one of my favorite kitchen appliances... next to my air fryer. A slow cooker is worth it due to its several benefits, such as hands-off cooking, conservation of energy, and bringing out the flavor in most foods. They also promote healthy cooking and are easier to use than most cooking appliances.


  1. Slow Cookers Allow for Hands-Off Cooking - Unlike most appliances that require a watchful eye or some level of care, slow cookers allow you to place your ingredients and leave them to cook. This is a great feature because you can leave it untended and go to work for the day or focus on other activities without worrying about the house burning down.

  2. Slow Cookers Bring Out the Flavor in Recipes - Slow cookers are known for their ability to bring out a recipe's true flavor. It combines the various characteristics of the used ingredients, transforming the recipe into an explosion of smells and authentic additive-free tastes. And since the ingredients cook at low temperatures, a slow cooker allows for proper and even distribution of flavors, thus leaving you with a delicious meal.

  3. Slow Cookers Are Great at Tenderizing Meat - With a slow cooker by your side, you can easily tenderize tough or cheap cuts of meat, making them smooth and tasty after a lengthy cooking process, which explains why a slow cooker is commonly used to prepare many venison dishes.

  4. Slow Cookers Can Help Reduce Overall Costs - Compared to the standard electric oven, slow cookers use less energy, which allows you to save money in the long run. Although it's not entirely practical to use a slow cooker for every meal, it can help you save on costs you incur in case you used other appliances to prepare the meal.

Most of the time you can just add some dish soap and let it soak over night for easier cleaning the next day. They also make crock pot liners that you can line the inside with and then throw it away afterwards! No cleaning required! With most slow cooker recipes, most of the ingredients do not require prior preparation or cooking before adding them in. This saves you time in cleaning other dishes usually required for cooking.

  6. Slow Cookers Come in Different Types - Technological advancements have made slow cookers increasingly versatile, some with programmable settings!

  7. Slow Cookers Are the Ultimate Time Savers - A slow cooker is a great way to cook food when you're busy with other things. It doesn't require much attention, so it's perfect for the times when you're exhausted and need an easy dinner or when you have an endless to-do list and you want one less thing added.

 


Add Chicken broth and enchilada sauce first to the Slow Cooker, then chicken breast, tomatoes with juices, black beans, and corn.


Cook on Low for 8 hours, or high for 4 hours. Shred Chicken in the pot, or remove to shred and place back in. Taste for seasoning and add more salt if needed.


To make this soup creamy, add a cup of heavy cream after shredding chicken, stir to combine, and keep warm in the slow cooker or instant pot until read to serve.


Store leftovers without toppings up to 5 days in the refrigerator. Re-heat on stove or microwave, then add toppings.

 

CROCK POT CHICKEN TORTILLA SOUP



INGREDIENTS


  • 1½ pounds chicken breast

  • 4 cups low sodium chicken broth

  • 1 cup red enchilada sauce

  • 14.5 oz fire roasted tomatoes with juices

  • 15 oz black beans, drained and rinsed

  • 15 oz sweet corn, drained and rinsed


INSTRUCTIONS


  1. Add Chicken broth and enchilada sauce first to Instant Pot or Slow Cooker, then chicken breast, tomatoes with juices, black beans, and corn.

  2. Slow Cooker- Cook on Low for 8 hours, or high for 4 hours. Shred Chicken in the pot, or remove to shred and place back in. Taste for seasoning and add more salt if needed.

  3. Garnish with avocado, cilantro, shredded Cheese, sour Cream, Greek yogurt or hot sauce.
